Brown Butter Peach Shortbread

While trying to figure out what to do with the two lone peaches in my fridge I came across this little number from my favorite Smitten Kitchen- Brown butter peach shortbread. Sounds delightful. Game on.

The cast-
1 cup butter
1 cup sugar
3 cups flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 egg
2 thinly sliced peaches
Brown butter in a saucepan and place your nutty delicious browned butter in the fridge to cool and solidify. Browning butter sounds simple enough but needs to be watched very closely as the butter can go from brown to burned in just a few seconds. For a little tutorial see these step by step instructions.
Blend together sugar, flour, salt, baking powder, cinnamon and nutmeg
With a pastry blender or fork, slowly incorporate egg and solid browned butter until crumbly
Press 3/4 of the crumbles into a buttered 9x13 pan
Thinly slice 2 juicy peaches
Perfectly layer your peaches in the pan if you are the "type A" kind. If not, any other tossing strategy will do
Sprinkle with remaining crumbles
Bake in a preheated oven at 375 degrees for 25-30 mins until slightly brown
Slice and enjoy the peachy goodness!
