I LOVE spending time in the kitchen. With some good music and the right company a day baking in the kitchen can be just as fun and relaxing as a day on the beach. Do I really mean that? Yes! Call me crazy, I don't care.
Every once in a while I have one of those days where I just need to bake something... anything. It's not that I'm hungry or trying to satisfy one of those all too familiar sweet cravings rather just looking for a baking project, something to entertain myself for a while. On this particular day, Kirsten and I decided to empty out our baking cupboards and see what we could come up with.
The Mission-
Without a trip to the grocery store, come up with a sweet treat using only the ingredients we could find in our cupboards. We complied our random goodies and came up with this....

Seriously, what the heck are we going to make with sprinkles, corn syrup, cocoa and peppermint sticks?! We were up for the challenge.
The Contestants-

Can I just take a moment to say that an apron is an absolute must on a baking day. There's something so fun and official about donning an apron. It says "Lookout world, these chicks are about to do some serious baking."
Matilda also appreciated the multi purpose apron. She was getting a little hungry listening to all of the sweet talk happening in the kitchen.
So we began to brainstorm. Corn syrup.. 1/2 a bag of butterscotch chips.. peanut butter.. SCOTCHEROOS! Yes!
6 Simple Ingredients-
1 cup sugar
1 cup corn syrup
1 cup peanut butter
8 cups rice crispies
6 oz. chocolate chips
6 oz. butterscotch chips
6 Simple Steps-
1. Bring corn syrup and sugar to a boil.
2. Add peanut butter and stir until well incorporated.

3. Pour mixture into rice crispies. Mix well.
4. Press into a buttered 9x13 inch cake pan.
5. Melt chocolate and butterscotch chips together. How you do this step is your choice. We went with the microwave and got perfect results.. easy peasy.
6. Spread melted chocolate over top.
Mmmm... peanut butter and chocolate really are the perfect couple.

That does look like an elf's fantasy! I am really looking forward to the next dessert at bat if it's what I think it is.
