Mmmm.... nothing smells better than a house filled with the scent of baking gingerbread cookies. Jakob and I have been making these chewy ginger snaps (renamed "ninja snaps" by Jakob) over the past few years. They have quickly become one of our favorite Christmas cookies!
The players...
2 tsp ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
3/4 cup margarine/butter
1 cup white sugar
1 egg
1 Tbsp water
1/4 cup molasses
2 Tbsp white sugar (for rolling dough)
Directions
1. Preheat oven to 350 degrees. Sift together flour, ginger, baking soda, cinnamon, nutmeg and salt. Set aside.
2. In a large bowl, cream together the margarine/butter, and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture.
5. Bake for 8-10 mins in the preheated oven. Allow cookies to cool on baking sheet for 5 mins before removing to a cooling rack. Store in your favorite Christmas tin.
So good you will have to lick the batter spoon! Enjoy!!
