Almond Chex Mix

I blame my SIL Sarah for getting me started on this deliciously addictive little snack. 
Almond Chex Mix. Sarah has been making it around Christmastime for the past few years and I cannot get enough! Although she already posted all you need to know right here, I thought I would post the recipe for my friends and fam as well.. it's just too good not to share with others. 

Sarah's Almond Chex Mix-
1 box of rice or corn Chex cereal (I used corn for my first attempt but I think I like rice Chex better)
2 1/2 cups sliced almonds
3/4 cup butter
1 cup light corn syrup
1 cup sugar
1 tsp almond extract
 Mix almonds and cereal in a large bowl. Set aside.
Melt butter in a saucepan. Add corn syrup and sugar. Bring to a boil. Stir frequently until the sugary concoction reaches 250 degrees. This took me a solid 10 minutes so be patient my friends. It's worth the wait. Once you reach 250 degrees remove from heat and stir in almond extract.
Pour the sugary mess over the almonds and Chex, stir until each piece is coated. Pour onto wax paper and let cool for 30 minutes.
Break pieces apart and enjoy!! Store in your favorite holiday tin. Chex is a breakfast cereal so it's 100% appropriate to eat this goodness all day long guilt free :)
